Gonzalez Byass Oloroso Matusalem Sherry is a highly acclaimed, VORS aged over 30 years fortified wine from Spain's Jerez region in Andalusia that beautifully captures the historic depth of its origin by blending an intense oxidative Oloroso character with the luscious sweetness of Pedro Ximenez. On the nose, this characteristic Oloroso Dulce shows a profound bouquet of dried figs, raisins, and dates, seamlessly layered with subtle notes of warm toffee, dark chocolate, hazelnut cream, and sandalwood. The palate is full-bodied, velvety, and beautifully balanced, offering a luxurious texture with concentrated flavours of molasses, espresso, and warming Christmas spices supported by a natural acidity and a delicate savoury herbal edge.
